There is actually no set rule which side of the boat you use whether its port or starboard its whichever you feel comfortable at but most people say that the starboard side is better but its also personal preference I suppose.
I was taught to sit on the starboard side using my left hand on the tiller while doing my Powerboat 2 course which I did on a sib as well as a rib, so being a creature of habit, I have always stuck to it.
I prefer to steer using my left hand because the tiller arm is fixed to the engine on port side so when pulling the tiller arm towards me to make a turn to port I have more room between me and the arm as opposed to sitting on the other side (port side). Also other factors that benefit from sitting on the starboard side is....
(a) sitting this side means that your posture is naturally leaning slightly forward into the boat which feels more balanced.
(b) counteracts the lifting force from the prop.
